Dijon and Thyme Chicken with Potato salad and Orzo Soup

This menu is another easy one to prepare. Dijon and Thyme Chicken drumstick is the only one taking time to marinade and bake. Other two real simple and i even cheat to use ready made chicken broth.

 This is Orzo pasta soup or they called it Bird Tongue soup here in Cairo. Just roast little bit the orzo pasta with or without butter is fine, once browned pour chicken broth into it and cook according to pasta instruction. Garnish with some parsley leaf finely chopped or chopped spring onion.

 Dijon and Thyme Chicken
Dijon & Thyme Roasted Chicken Drumsticks

Mustard paste:
¼ cup Dijon mustard
2 tbsp minced shallots
2 cloves garlic, minced
1 tbsp chopped fresh thyme
½ tsp salt
½ tsp freshly ground black pepper

Chicken:
8 chicken drumsticks, skin on
Kosher salt & freshly ground black pepper
2 tbsp olive oil

Making the mustard paste:
In a small bowl, combine Dijon mustard, shallots, garlic, thyme, salt, and pepper.

Preparing the chicken:
Place chicken drumsticks in a large dish and liberally rub the mustard paste over the drumsticks. Cover, refrigerate, and let rest for 1-2 hours.

Bake:
Cover the chicken with foil and bake for 30-45mins at temp 200 degree Celsius. I remove the foil around 10mins before finish cooking to let the chicken browned.
